  • Postopek



  • 1. Po potrebi model obložite s papirjem za peko in ga postavite na raven pladenj. Model mora biti popolnoma suh in hladen, da se ploščica lepo strdi in jo lahko vzamete iz modela brez deformacij.


  • 2. V majhni posodi zmešajte mlečne beljakovine, kolagenski hidrolizat, sladilo, glicerol, aromo in sol. Z lopatico mešajte 1 minuto, da se sestavine enakomerno porazdelijo in se zmes začne povezovati v gosto pasto.


  • 3. Nežno vmešajte sojin hrustljavček in sesekljane arašide. Mešajte le toliko, da so dodatki enakomerno razporejeni; prekomerno mešanje bo zdrobilo hrustljavo strukturo in preveč zbilo ploščico.


  • 4. Zmes v eni plasti trdno vtisnite v model. Stiskajte jo z enakomernim pritiskom, dokler površina ni ravna in masa ni kompaktna ter povezana. Hladite 20 minut, da se dovolj utrdi za jemanje iz modela brez deformacij.


  • 5. Ploščico vzemite iz modela in jo položite na papir za peko. V vodni kopeli skupaj stopite preliv iz mlečne čokolade, olje palmovih jedrc, kakavovo maslo in kakavovo maso ter nežno mešajte, dokler zmes ni gladka in popolnoma tekoča pri 40 do 45°C.
