  • 1. Po potrebi model obložite s papirjem za peko. V majhni posodi zmešajte mlečne beljakovine, kolagenski hidrolizat, polidekstrozo, sladilo in sol. Temeljito premešajte, da se praškaste sestavine enakomerno porazdelijo in ne ostanejo svetlejše sledi.


  • 2. Dodajte glicerol in aromo. Mešanico obdelujte z lopatico, dokler ne nastane gosta, povezana pasta. Vmešajte sesekljan arašid in mešajte le toliko časa, da so koščki enakomerno razporejeni. Masa mora biti voljna, gladka in rahlo lepljiva, ne mokra.


  • 3. Mešanico čvrsto vtisnite v model v enakomerni plasti. Stisnite jo z odločnim pritiskom, da bo ploščica ohranila kompaktno in enotno strukturo. Hladite 20 minut, dokler površina ni strjena in lahko ploščico čisto vzamete iz modela.

  • 5. Ploščico vzemite iz modela in jo položite na papir za peko. Obliv prelijte ali razmažite po ploščici v tanki, enakomerni plasti. Delajte hitro in gladko, da ostane površina čista in neprekinjena.


  • 6. Hladite 45 do 60 minut, dokler obliv ni popolnoma strjen in je ploščica na otip čvrsta. Končna tekstura mora biti kompaktna, rezljiva z rahlim uporom in stabilna pri sobni temperaturi brez sesedanja.


  • Serviranje in postrežba



    Ploščico postrezite celo, na sredini majhnega krožnika, ali jo za postrežbo lično zavijte. Obliv mora biti gladek in nepoškodovan, koščki arašida pa morajo biti vidni v prerezu. Končni vtis mora biti zadržan: kompaktna ploščica s čistim prelomom, mehkim žvečenjem in uravnoteženim sladko-slanim zaključkom.
