  • Postopek



  • 1. Model obložite s papirjem za peko, da boste končano ploščico zlahka vzeli iz njega. Vse sestavine stehtajte natančno; ravnovesje je odvisno od preciznosti.

  • 2. V majhni posodi zmešajte mlečne beljakovine, kolagenski hidrolizat, sladilo, polnomastno mleko v prahu in sol. Temeljito premešajte, da se praškaste sestavine enakomerno porazdelijo in ne ostanejo svetlejše sledi.

  • 3. Dodajte sesekljan arašid in znova premešajte, da se enakomerno razporedi po suhi osnovi.

Nežno segrevajte le toliko, da zmes postane tekoča in homogena, približno 1 minuto na zelo nizki temperaturi ali v kratkih intervalih, med mešanjem, dokler ni sijoča in popolnoma povezana.

  • 5. Toplo tekočo zmes prelijte čez suhe sestavine. S spatulo delajte hitro, dokler masa ni enakomerno navlažena in se ne začne sprijemati v grudice. Biti mora gosta, voljna in rahlo lepljiva, ne mokra.

  • 6. Zmes v enem sloju trdno vtisnite v pripravljen model. Stiskajte jo z enakomernim pritiskom, da površina postane ravna in kompaktna, brez zračnih žepov v vogalih.

  • 7. Hladite 60 minut oziroma dokler ploščica ni dovolj čvrsta, da jo lahko čisto vzamete iz modela, in pri rezanju ali ugrizu ohrani oster rob.

    Ploščico vzemite iz modela in jo postrezite celo ali pa jo čisto diagonalno prerežite za bolj dovršeno predstavitev. Površina mora ostati gladka in kompaktna, arašid mora biti viden skozi strukturo, zaključek pa mat in ne masten.
