Uvod


To je klasična slaščica zadržanosti in natančnosti: nugat, ki je lahek pri ugrizu, a dovolj čvrst, da ga je mogoče lepo narezati.   • 1. Dno pekača ali okvirja obložite z oblatnim papirjem in ga natančno prirežite, da leži ravno brez prekrivanja. Pekač postavite na stran na toplotno odporno površino.


  • 2. Mandlje dajte v suho ponev na srednji temperaturi in jih segrevajte 3 do 4 minute, ob stalnem mešanju, dokler ne zadišijo in rahlo potemnijo. Takoj jih preložite v skledo, da se ne kuhajo naprej.


  • 3. V kozici zmešajte sladkor, glukozni sirup in med. Postavite na srednjo temperaturo in kuhajte brez mešanja 6 do 8 minut; kristale s sten odstranite s čopičem le po potrebi, dokler sirup ne doseže 145°C ter je videti bister in živahno brbota.


  • 4. Medtem ko se sirup kuha, v namiznem mešalniku na srednji hitrosti začnite stepati beljak. Dodajte sol in stepajte naprej, dokler beljak ne tvori mehkih, zračnih vrhov.


  • 5. Ko mešalnik deluje na srednji hitrosti, vroč sirup v enakomernem curku vlivajte ob strani posode. Stepajte še 6 do 8 minut, dokler zmes ne postane gosta, sijoča in na otip topla, ne več vroča.


  • 6. Dodajte vaniljev ekstrakt in na kratko stepite, da se poveže. S spatulo vmešajte tople mandlje, odločno, da se enakomerno porazdelijo, ne da bi nugat uplahnil.


  • 7. Nugat prenesite v pripravljen pekač in ga s spatulo enakomerno razporedite do vogalov. Na površino pritisnite drugi list oblatnega papirja in ga nežno pogladite, da je plošča ravna in zaprta.
