To je klasika v svoji najbolj disciplinirani obliki: voljno pšenično testo, čista paradižnikova osnova, mlečna mocarela in bazilika, dodana šele na koncu, da njen vonj ostane neokrnjen. Ravnovesje temelji na zadržanosti; vsak element mora ostati razločen, celota pa mora delovati usklajeno.   • Postopek



  • 1. V posodi za mešanje združite pšenično moko, kvas in sol. Dodajte vodo in oljčno olje, nato mešajte, dokler ne ostane nič suhe moke. Testo bo videti grobo in rahlo lepljivo.


  • 2. Testo prenesite na čisto delovno površino in ga gnetite 8 do 10 minut, da postane gladko, elastično in pod prsti rahlo prožno. Raztezati se mora, ne da bi se zlahka trgalo, in biti voljno, ne zategnjeno.


  • 3. Testo vrnite v posodo, pokrijte in pustite na sobni temperaturi 60 minut oziroma dokler se vidno ne poveča in prezrači. Delovati mora lažje in ob pritisku ohraniti rahlo vdolbino.


  • 4. Pečico nastavite na 250°C in jo pustite, da se popolnoma segreje vsaj 20 minut. Če uporabljate kamen ali jekleno ploščo za pico, ju med segrevanjem postavite v pečico.


  • 5. Na rahlo pomokani površini oblikujte testo v okroglo osnovo premera 30 cm, pri čemer naj bo rob nekoliko debelejši od sredine. Prenesite ga na pladenj ali lopar, ne da bi stisnili rob.


  • 6. Paradižnikovo omako enakomerno razporedite po testu, pri tem pa pustite ozek čist rob. Po omaki razporedite mocarelo, nato začinite s soljo. Na koncu v tankem, enakomernem curku dodajte oljčno olje.


  • 7. Pecite 8 do 10 minut, dokler skorja na robovih ni močno zlato zapečena, osnova povsem pečena in mocarela stopljena z nekaj zapečenimi lisami. Sredina mora ostati mehka, ne mokra.


  • 8. Pico vzemite iz pečice in po površini takoj potresite baziliko. Pred rezanjem jo pustite stati 1 minuto, da se sir umiri in se aroma odpre.


  • Serviranje in postrežba


    Pico postrezite celo, nato jo narežite na enakomerne kose. Skorja naj uokvirja svetlo paradižnikovo plast, stopljen sir in svežo baziliko, pri čemer naj oljčno olje doda sijaj, ne teže.
