  • Postopek



  • 1. Po potrebi model obložite s papirjem za peko in ga za stabilnost postavite na pladenj. V manjši skledi združite mlečne beljakovine, kolagenski hidrolizat, polidekstrozo, sladilo, polnomastno mleko v prahu, sol in aromo. Temeljito premešajte, da so praški enakomerni in da ne ostanejo svetle sledi.


  • 2. Kakavovo maslo, olje palmovih jedrc in kakavovo maso dajte v toplotno odporno skledo nad zelo blag vir toplote. Neprestano mešajte 3 do 4 minute, dokler se vse popolnoma ne stopi in postane gladko, brez vidnih trdnih delcev. Mešanica mora biti tekoča, vendar ne vroča; odstranite jo takoj, ko postane sijoča in enotna.


  • 3. Maščobno fazo v enakomernem curku vlijte v suho mešanico in z lopatico prepogibajte, dokler ne nastane gosta pasta. Obdelujte jo 1 do 2 minuti, dokler masa ni povezana, rahlo lepljiva in enakomerno potemnjena.


  • 4. Vmešajte sesekljane lešnike in sojin hrustljavček, le toliko, da se enakomerno porazdelita. Tekstura mora ostati strukturirana; ne obdelujte predolgo, sicer bo hrustljavček izgubil izrazitost.


  • 5. Mešanico čvrsto vtisnite v model in jo zbijajte po plasteh, da površina postane ravna in robovi čisti. Enakomerno pritiskajte 30 do 45 sekund, da odstranite praznine in ustvarite gosto, enakomerno ploščico.


  • 6. Hladite v hladilniku 60 minut oziroma dokler ni popolnoma strjena in čvrsta na dotik. Ploščica se mora lepo sprostiti iz modela in ohraniti oster rob, ne da bi se drobila.


  • Serviranje



    Ploščico vzemite iz modela in jo celo postrezite na ohlajenem krožniku ali deski, obloženi s papirjem za peko. Postrezite pri hladni sobni temperaturi, ko se kakavove note odprejo in se lešnik jasno zaključi, medtem ko notranjost ostane kompaktna in natančna.
