  • 10 g hidrolizovanog kolagena

  • Postupak


  • 1. Po potrebi obložite uzak kalup za pločicu papirom za pečenje. Kalup treba da primi gotovu pločicu od 55 g sa kompaktnim, ujednačenim profilom.


  • 2. U maloj posudi sjedinite mlečni protein, hidrolizovani kolagen, zaslađivače, glicerol, ulje palminog jezgra, prirodnu aromu i so. Mešajte špatulom 2 do 3 minuta dok se ne formira gusta, glatka pasta. Masa treba da bude savitljiva, blago sjajna i bez suvih delova.


  • 3. Na kraju umešajte sojine hrskave kuglice i mešajte samo dok se ravnomerno ne rasporede, oko 20 sekundi. Smesa treba da se drži zajedno bez drobljenja hrskavih kuglica.


  • 4. Čvrsto utisnite smesu u pripremljen kalup, sabijajući je u kompaktnu pločicu. Poravnajte površinu špatulom i rashladite 10 minuta, dok se površina ne učvrsti i pločica ne može uredno da se vadi i rukuje njome.


  • 5. Otopite preliv od mlečne čokolade sa kakao puterom na blagoj temperaturi, mešajući dok ne postane tečan i potpuno ujednačen. Preliv treba da bude topao, sjajan i dovoljno redak da se razmaže u čistom sloju.


  • 6. Izvadite rashlađenu pločicu iz kalupa i stavite je na pleh obložen papirom za pečenje. Ravnomerno je obložite čokoladnom mešavinom, okrećući jednom da se prekriju sve strane. Ostavite višak da kratko otekne kako bi omotač ostao tanak i uredan.


  • 7. Ostavite pločicu da se stegne na sobnoj temperaturi 5 do 8 minuta, ili dok preliv ne bude čvrst na dodir i daje jasno pucketanje pri lomu. Gotova pločica treba da ostane kompaktna, sa kremastom unutrašnjošću i netaknutim hrskavim dodacima.
