En klassisk upplagd fiskrätt med mör torsk serverad med smörig beurre blanc och rödvinsreduktion, tillsammans med blomkål och vårmorötter. Kompositionen är elegant och franskinspirerad, med en fyllig såsbalans mot den milda vita fisken.

  • Torsk: 170 g

  • Blomkål: 90 g

  • Beurre blanc: 45 g

  • Rödvinsreduktion: 20 g

  • Vårmorötter: 55 g

  • Smör: 10 g


  • Instruktioner


  • 1. Krydda torsken lätt och tillaga den varsamt tills den precis är ogenomskinlig och skivar sig fint.

  • 2. Ångkoka eller blanchera blomkålen tills den är mjuk, och värm den sedan med lite av smöret.

  • 3. Tillaga vårmorötterna tills de är mjuka men fortfarande har spänst, och glasera dem sedan lätt med resten av smöret.

  • 4. Lägg upp blomkålen och morötterna som grönsaksbas på tallriken.

  • 5. Placera torsken ovanpå eller bredvid grönsakerna.

  • 6. Skeda beurre blanc över torsken och avsluta med rödvinsreduktionen runt tallriken.
