  • 1. Painitin ang oven sa 220°C. Lagyan ng parchment paper ang baking tray.


  • 2. Ilagay ang mangkamote sa isang katamtamang mangkok kasama ang 20 g olive oil at haluin hanggang ang bawat bahagi ay bahagyang mabalutan. Ikalat ito sa tray sa iisang patong. I-roast nang 18 minuto, saka baliktarin ang mga piraso at ipagpatuloy ang pag-roast nang 8 hanggang 10 minuto pa, hanggang sa maging browned ang mga gilid at malambot ang gitna nang walang matigas na ubod.


  • 3. Habang nagro-roast ang mangkamote, painitin ang isang malaking sauté pan sa katamtamang-lakas na init. Idagdag ang mga kabute at lutuin nang 6 hanggang 8 minuto, hinahalo lamang kung kinakailangan, hanggang sa pakawalan nila ang kanilang moisture, saka magkaroon ng malalim na ginintuang kulay at mas puro na aroma.
