  • Kaedah


  • 1. Masukkan air, gula perang, mentega, kayu manis, dan buah pelaga ke dalam kuali sauté. Letakkan di atas api sederhana dan biarkan mendidih perlahan, kacau hanya sehingga gula larut dan mentega teremulsi sepenuhnya, kira-kira 2 minit. Cecair itu sepatutnya berbau rempah yang hangat dan kelihatan berkilat, bukan berminyak.


  • 2. Masukkan ulas pear dan epal dalam satu lapisan jika boleh. Tutup dan poach di atas api kecil selama 12 hingga 15 minit, pusingkan buah sekali di pertengahan masa memasak. Buah sepatutnya lembut secara sekata, mengekalkan bentuknya, dan mudah ditembusi hujung pisau tanpa hancur.


  • 3. Tanggalkan penutup dan teruskan memasak selama 2 hingga 3 minit, mencedok dan menyiram sirap ke atas buah ketika sirap sedikit berkurang. Sirap sepatutnya menyaluti belakang sudu dengan ringan dan melekat sebagai glasir nipis.


  • 4. Alihkan buah ke pinggan hidang atau mangkuk cetek. Sudukan baki sirap di atas dan di sekeliling buah, sambil memastikan persembahan kekal kemas dan terkawal.
