  • 16 g mlečnih beljakovin

  • 10 g kolagenskega hidrolizata

  • 6 g sladila

  • 5 g polnomastnega mleka v prahu

  • 2 g soli

  • 2 g arome

  • Postopek


  • 1. Majhen pravokoten model obložite s papirjem za peko. Model naj sprejme ploščico s približno 55 g v urejenem, enakomernem bloku.


  • 2. V toplotno odporni skledi zmešajte mlečne beljakovine, kolagenski hidrolizat, sladilo, polnomastno mleko v prahu, sol, aromo in emulgator. Temeljito mešajte 1 minuto, dokler se praški enakomerno ne porazdelijo in zmes ni enotne barve.


  • 3. Dodajte glicerol in z lopatico mešajte 1 minuto. Zmes se mora začeti povezovati v gladko, voljno pasto brez suhih delov.


  • 4. V majhni kozici na nizkem ognju skupaj stopite kakavovo maslo, kakavovo maso in sončnično olje 2 do 3 minute ter nežno mešajte, dokler zmes ni popolnoma tekoča in sijoča. Odstavite z ognja takoj, ko je zmes homogena; ne pregrevajte.


  • 5. Stopljeno maščobno fazo vlijte v beljakovinsko zmes in odločno mešajte 1 do 2 minuti, dokler masa ne postane gladka, povezana in rahlo lepljiva. Na koncu vmešajte sojin hrustljavček, le toliko, da se enakomerno porazdeli in ostane nepoškodovan.


  • 6. Zmes v enem sloju potisnite v pripravljen model. Z lopatico jo čvrsto stisnite, da bo površina ravna in robovi čisti. Ploščica mora delovati gosta in enotna, hrustljavi koščki pa morajo biti razporejeni po vsej masi, ne zdrobljeni.


  • 7. Hladite v hladilniku 1 uro oziroma dokler ploščica ni popolnoma strjena in čvrsta na dotik. Iz modela se mora lepo sprostiti in po odstranitvi ohraniti raven rob.


  • Serviranje in postrežba


    Ploščico vzemite iz modela in jo postrezite celo ali pa jo z ostrim nožem narežite za čist prerez. Zaključek mora biti gladek in kompakten, z vidnimi hrustljavimi dodatki in zadržanim kakavovim sijajem.
