  • Svinjina, 120 g, obrezana in potolčena na enakomerno debelino 5 mm

  • Sol, 2 g

  • Črni poper, 0.5 g

  • Pšenična moka, 10 g

  • Jajce, 25 g, razžvrkljano

  • Drobtine, 20 g

  • Rastlinsko olje, 25 g


  • Postopek


  • 1. Svinjino položite med lista papirja za peko ali v čisto vrečko in jo enakomerno potolcite na debelino 5 mm. Zrezek mora biti širok, enakomeren in prožen, brez natrganih robov.

  • 2. Obe strani svinjine začinite s soljo in črnim poprom. Pustite stati 2 minuti, da se začimbe na površini usedejo v meso.

  • 3. Pripravite tri plitve posode. V prvo dajte pšenično moko, v drugo razžvrkljano jajce, v tretjo pa drobtine.

  • 4. Svinjino povaljajte v moki, tako da prekrijete vso površino. Otresite odvečno moko; plast mora biti tanka in suha.

  • 5. Pomokano svinjino pomočite v jajce, da se v celoti prekrije. Dvignite in pustite, da odvečna količina odteče 2 do 3 sekunde.

  • 6. Svinjino pritisnite v drobtine, jo enkrat obrnite in rahlo pritisnite, da se skorjica enakomerno oprime. Površina mora biti popolnoma prekrita, brez težkih grudic.

  • 7. V ponvi na srednji temperaturi segrejte rastlinsko olje do 170°C. Olje mora enakomerno valovati, ne pa se kaditi.

  • 8. V ponev položite paniran svinjski zrezek in ga pecite 3 do 4 minute na prvi strani, dokler spodnja stran ni temno zlato rjava in hrustljava.

  • 9. Zrezek previdno obrnite in pecite še 3 minute, dokler druga stran ni enakomerno zapečena in svinjina ne doseže notranje temperature 63°C. Skorjica mora biti slišno hrustljava, meso pa na dotik ravno prav čvrsto.

  • 10. Zrezek prenesite na rešetko ali pladenj, obložen s papirjem, in pustite počivati 2 minuti. Obloga mora ostati suha in nepoškodovana, sokovi pa se morajo pred serviranjem umiriti.


  • Serviranje


    Zrezek položite nekoliko izven sredine na topel krožnik, pri tem pa ohranite skorjico nepoškodovano. Postrezite takoj, dokler zunanjost ostane hrustljava, notranjost pa mehka in sočna.
