  • Postopek



  • 1. Po potrebi model obložite s papirjem za peko in ga postavite na stran. V majhni skledi zmešajte mlečne beljakovine, kolagenski hidrolizat, sladilo, mleko v prahu, sol in emulgator. Temeljito premešajte, da bo suha mešanica enotna in brez prog.


  • 2. Dodajte glicerol in ga z lopatko vdelajte v suhe sestavine, dokler ne nastane čvrsta, povezana pasta. Mešanica se mora ob pritisku držati skupaj in biti na otip gladka, ne praškasta.


  • 3. Nežno vmešajte sesekljane arašide in sojin hrustljavi dodatek, le toliko, da se enakomerno porazdelita. Hrustljavega dodatka ne zdrobite; ostati mora razločen za lahek, krhek ugriz.


  • 4. Mešanico trdno vtisnite v model v enakomerni plasti. Stiskajte jo z enakomernim pritiskom, da površina postane ravna in kompaktna. Hladite 10 minut, le toliko, da se ploščica dovolj utrdi za čisto jemanje iz modela.


  • 5. V majhni toplotno odporni skledi, postavljeni nad posodo z komaj vrelo vodo, združite kakavovo maslo, olje palmovih jedrc in kakavovo maso. Mešajte, dokler se vse popolnoma ne stopi in postane sijoče, nato odstavite z ognja. Preliv mora biti tekoč, topel in popolnoma gladek.
