  • 1. Pripravite jedro. V majhni posodi zmešajte mlečne beljakovine, kolagenski hidrolizat, sesekljane arašide, polidekstrozo, sladilo in sol. Mešajte, dokler suhe sestavine niso enakomerno porazdeljene in arašidi popolnoma razpršeni po zmesi.


  • 2. Povežite maso. Karamelo, glicerol in sončnično olje skupaj segrevajte v majhni kozici na nizkem ognju 1 do 2 minuti, le toliko, da postanejo tekoči in sijoči. Ne zavrite. Prelijte čez suho mešanico in mešajte z lopatico, dokler ne nastane gosta, enotna pasta. Tekstura mora biti voljna, rahlo lepljiva in brez suhih delov.


  • 3. Oblikujte ploščico. Mešanico trdno vtisnite v model in jo zbijajte po plasteh, da površina postane ravna, robovi pa ostri. Hladite 10 minut oziroma dokler ploščica ni dovolj čvrsta, da jo lahko lepo vzamete iz modela.


  • 4. Oblijte ploščico. Čokoladni obliv nežno stopite, da postane gladek in tekoč. Ohlajeno ploščico vzemite iz modela in jo položite na rešetko ali papir za peko. Obliv z žlico nanesite ali razporedite po ploščici v enakomerni plasti, tako da površino popolnoma prekrije. Pustite, da odvečni obliv odteče, da lupina ostane tanka in urejena.


  • 5. Utrdite zaključek. Hladite 5 do 8 minut, le toliko, da je čokoladni obliv čvrst, sijoč in na dotik ni več lepljiv.
