  • Postopek


  • 1. Model skrbno obložite s papirjem za peko, pri čemer pustite dovolj previsa, da boste lahko ploščico lepo dvignili iz modela. Dajte na stran.


  • 2. V majhni skledi zmešajte mlečne beljakovine, kolagenski hidrolizat, polidekstrozo, sladilo, polnomastno mleko v prahu in sojin crisp. Temeljito premešajte, da se suhe sestavine enakomerno porazdelijo in ne ostanejo zgoščeni žepki.


  • 3. V majhno kozico dajte kakavovo maslo, olje palmovih jedrc, kakavovo maso, glicerol in sončnični lecitin ter segrevajte na najnižji temperaturi. Nežno segrevajte 2 do 3 minute in neprestano mešajte, le toliko, da se vse popolnoma stopi in postane sijoče. Mešanica mora biti tekoča in enotna, brez vidnih trdnih delcev.


  • 4. Odstavite z ognja. Stopljeno maščobno mešanico v dveh delih dodajte suhim sestavinam in po vsakem dodatku odločno premešajte, da nastane povezana pasta. Na koncu vmešajte sesekljan lešnik. Masa mora biti gosta, gladka in rahlo prožna, pri čemer mora sojin crisp ostati še vedno razločen.


  • 5. Mešanico vtisnite v pripravljen model v enakomerni plasti in jo z lopatico čvrsto stisnite, da odstranite zračne žepe. Površino poravnajte z ravnim robom, da bo vrh raven in zbit.


  • 6. Hladite 10 do 12 minut oziroma dokler ploščica ni dovolj čvrsta, da jo lahko lepo vzamete iz modela in ohrani trdno strukturo, primerno za rezanje. Površina mora biti na otip suha, notranjost pa gosta, vendar ne trda.
