  • Postopek



  • 1. V majhni skledi združite mlečne beljakovine, kolagenski hidrolizat, drobno sesekljane arašide, polnomastno mleko v prahu, sojin crisp, sladilo, sol in aromo. Temeljito premešajte, da se suhe sestavine enakomerno porazdelijo ter da sta sojin crisp in arašid dobro razpršena po zmesi.


  • 2. Dodajte glicerol in zmes obdelujte z lopatico 1 do 2 minuti. Masa se mora začeti povezovati v kompaktno, oblikovalno pasto z rahlo lepljivo površino in brez suhih delov.


  • 3. Arašidovo proteinsko osnovo trdno vtisnite v model za 55 g ploščico ali v majhen obložen pravokoten model. Stiskajte jo po plasteh, da odstranite zračne žepe in ustvarite gosto, enakomerno sredico. Hladite 10 minut, dokler se površina ne utrdi in ploščica čisto ohrani obliko.


  • 4. V posodi, odporni na vročino, združite kakavovo maslo, olje palmovih jedrc, kakavovo maso, emulgator in sladilo. Postavite nad zelo blag vir toplote ali nad komaj soparno vodno kopel ter stopite do gladkega in popolnoma povezanega stanja. Mešajte, dokler prevleka ni sijoča in tekoča, brez vidnih delcev.


  • 5. Ohlajeno ploščico vzemite iz modela in jo položite na rešetko ali peki papir. Čokoladno prevleko z žlico nanesite ali prelijte čez ploščico v tanki, enakomerni plasti; po potrebi jo enkrat obrnite, da prekrijete tudi stranice. Pustite, da odvečna prevleka odteče, tako da zaključek ostane tanek in ne težak.


  • 6. Prevlečeno ploščico pustite stati 5 minut pri hladni sobni temperaturi, nato jo hladite še 5 do 8 minut, le toliko, da se prevleka utrdi in površina dobi čist prelom. Ploščica mora v notranjosti ostati gosta, z urejeno zunanjostjo in zadržanim sijajem.
