Ta ploščica je zasnovana za čisto strukturo: gosto arašidovo jedro, poudarjeno s kakavom in izostreno s soljo, nato pa zaprto pod tankim čokoladnim prelivom.   • Postopek


  • 1. Model skrbno obložite in ga postavite na dosegu roke. V toplotno odporni posodi zmešajte arašide, mešanico mlečnih beljakovin, vlaknine iz korenine cikorije, sladkor, kakav v prahu in sol. Temeljito premešajte, da se suhe sestavine enakomerno porazdelijo in ne ostanejo svetle proge.


  • 2. Dodajte glicerin in ga z lopatico vdelajte v zmes, dokler se ne začne sprijemati v grudice. Zmes mora postati povezana, rahlo sijoča in dovolj čvrsta, da ob pritisku drži skupaj.


  • 3. Zmes prenesite v model. Trdno in enakomerno jo vtisnite, pri tem pa z ravnim delom lopatice stisnite površino. Ploščica mora biti gosta, ravna in brez praznin. Hladite 10 minut, dokler površina ni na otip utrjena in se ploščica lepo sprosti iz modela.


  • 4. V majhni kozici na zelo nizkem ognju združite čokoladni preliv in palmovo olje. Mešajte le toliko časa, da se stopi in postane gladko, nato takoj odstavite. Preliv mora biti tekoč, sijoč in topel, ne vroč.


  • 5. Ohlajeno ploščico vzemite iz modela in jo položite na rešetko ali čist pladenj. Preliv prelijte ali razmažite po ploščici v tanki, enakomerni plasti, tako da je vrh povsem prekrit in rob urejen. Pustite, da se preliv strdi pri sobni temperaturi, ali pa na kratko ohladite, dokler ni čvrst in mat.


  • Serviranje


    Ploščico postrezite celo ali jo čisto prerežite po diagonali, da se razkrije gosta notranjost. Končni videz mora biti gladek in zadržan, s celotno čokoladno ovojnico in kompaktnim arašidovim jedrom pod njo.
