Uvod

  • Postopek



  • 1. V velikem loncu zavrite vodo in dodajte sol. Voda mora biti opazno začinjena. Dodajte špagete in jih kuhajte 8 do 10 minut, na začetku enkrat ali dvakrat premešajte, dokler niso ravno prav mehki, s čvrstim jedrom in brez moknatega občutka.


  • 2. Medtem ko se testenine kuhajo, v majhnem kuhinjskem sekljalniku zmešajte peteršilj, špinačo, sušeni paradižnik, česen, parmezan, čilijeve kosmiče, črni poper in oljčno olje. Obdelajte v grob, z žlico zajemljiv pesto z vidnimi zelenimi in rdečimi delci. Tekstura mora biti dovolj ohlapna, da obda testenine, ne da bi postala mastna.


  • 3. Prihranite 30 g vode od kuhanja testenin, nato špagete dobro odcedite. Takoj jih prenesite v veliko ponev za sotiranje na nizkem ognju.


  • 4. Špagetom dodajte pesto in 20 g prihranjene vode od kuhanja testenin. Neprestano premetavajte 1 do 2 minuti, dokler se omaka ne emulgira in oprime testenin v tankem, sijočem sloju. Preostalo prihranjeno vodo dodajte le po potrebi, da testenine ostanejo voljne in rahlo obdane z omako. Končni špageti morajo biti mehki, dobro začinjeni in enakomerno obdani, ne mokri.


  • 5. Poskusite in prilagodite le z obstoječim ravnovesjem začimb v ponvi, tako da jih nekaj sekund dlje premetavate, če omaka potrebuje več povezanosti. Odstavite z ognja takoj, ko so testenine videti svilnato obdane in pesto zadiši.

    Špagete zavrtite v nizek kupček na sredini toplega krožnika. Morebitni preostali pesto enakomerno naložite po vrhu, tako da zelena omaka in sušeni paradižnik ostaneta vidna. Postrezite takoj, ko so testenine še sijoče in je aroma česna, zelišč in čilija sveža.
