Ta pečenka temelji na zadržanosti: svinjina je temeljito začinjena, nato pa jo nosijo česen, soja, čili in odmerjena sladkoba rjavega sladkorja. Marinada je neposredna in koncentrirana, mesu daje lakirano površino ter slastno pikantnost, ki ostaja uravnotežena in ne agresivna. Postopek
  • 1. V majhni skledi zmešajte česen, sojino omako, čilijevo omako, rjavi sladkor, rastlinsko olje, papriko, črni poper in sol. Mešajte, dokler se sladkor ne raztopi in zmes ni enotna, brez vidnih suhih začimb.


  • 2. Svinjsko pečenko položite v veliko skledo ali plitvo posodo in jo temeljito premažite z marinado. Meso večkrat obrnite, da je vsaka površina enakomerno prekrita. Pokrijte in marinirajte 45 minut pri sobni temperaturi ali do 8 ur v hladilniku, če čas dopušča.


  • 3. Pečico segrejte na 190°C. V pekač postavite rešetko. Svinjino dvignite iz marinade in pustite, da odvečna marinada odteče; marinado, ki ostane na mesu, ohranite. Pečenko položite na rešetko, z maščobno stranjo navzgor, če je primerno.


  • 4. Pecite 1 uro 10 minut do 1 uro 20 minut in jo enkrat na polovici peke prelijte s sokovi iz pekača. Površina mora postati globoko mahagonijeva, rahlo lepljiva in aromatična, medtem ko notranja temperatura na najdebelejšem delu doseže 68°C.


  • 5. Svinjino vzemite iz pečice, jo ohlapno pokrijte s folijo in pustite počivati 15 minut. Med počivanjem se morajo sokovi umiriti, površinska glazura pa mora ostati cela in ne mokra.


  • 6. Pečenko narežite počez na vlakna na urejene rezine. Pred serviranjem po mesu prelijte vse nabrane sokove.

    Rezine razporedite v čisto, rahlo prekrivajočo se linijo ali pahljačo. Prelijte le s toliko sokovi iz pekača, da se meso rahlo sveti, robovi pa ostanejo vidni in glazura jasno izražena. Postrezite toplo, tako da je značaj čilija in česna skoncentriran na površini, svinjina pa v notranjosti ostane sočna in čvrsta.
