  • Postopek

  • 1. Zelenjavo pripravite natančno. Lotosovo korenino narežite enakomerno, da se bo povsod cvrla z enako hitrostjo. Sladki krompir narežite na tanke, enakomerne paličice. Šparglje in stročji fižol obrežite na urejeno dolžino, enoki pa ločite v majhne šopke. Vso zelenjavo popolnoma osušite; površinska vlaga bo oslabila testo in zmotila skorjico.


  • 2. Testo pripravite tik pred cvrtjem. V skledi zmešajte pšenično moko in sol. Dodajte razžvrkljano jajce in ledeno mrzlo vodo, nato na kratko premešajte s paličicami ali metlico le toliko, da se zmes ohlapno poveže. Majhne grudice so zaželene. Testo mora ostati bledo, tekoče in rahlo teksturirano, ne gladko ali elastično.


  • 3. Olje segrejte na 170°C. Temperaturo vzdržujte enakomerno; če preveč pade, bo obloga vpila olje, če pa se preveč dvigne, bo testo porjavelo, še preden bo zelenjava pravilno pripravljena.


  • 4. Zelenjavo pomakajte v testo v navedenem vrstnem redu. Vsak kos rahlo obložite in pustite, da odvečno testo odteče. Cvrite v majhnih serijah 2 do 4 minute, po potrebi enkrat obrnite, dokler obloga ni hrustljava, bledo zlata in nežno rebrasta. Lotosova korenina in sladki krompir morata biti v sredini mehka; šparglji, stročji fižol in enoki pa morajo ostati živahni in ravno prav kuhani.


  • 5. Tempuro dvignite iz olja in jo takoj odcedite na kovinski rešetki, postavljeni nad papir. Takoj jo začinite s soljo, vendar varčno, da skorjica ostane čista in suha. Postrezite brez odlašanja, ko je testo še vedno krhko in zelenjava ohranja svoj kontrast.


  • Serviranje in postavitev na krožnik
    Tempuro razporedite v zadržan skupek, pri čemer najprej položite večje kose, lažje gobe in fižol pa dodajte za zaključek kompozicije. Krožnik naj ostane odprt in uravnotežen, tako da hrustljavi robovi ostanejo vidni. Postrezite takoj, da lupina ostane suha in zelenjava ohrani svoje različne teksture.
