  • 1. Beli riž spirajte pod hladno vodo, dokler voda ni skoraj bistra. V majhni kozici zmešajte riž, vodo in sol. Na srednjem ognju zavrite, nato pokrijte in zmanjšajte na najnižji ogenj. Kuhajte 12 minut, ne da bi dvignili pokrov. Odstavite z ognja in pustite počivati, pokrito, 10 minut. Zrna morajo biti mehka, ločena in na površini suha.


  • 2. Medtem ko se riž kuha, kumaro narežite na enakomerne palčke. Limono narežite na krhlje. Oboje pripravite za serviranje.


  • 3. Piščančje prsi osušite s papirnato brisačo. Po potrebi jih razprite v enakomeren zrezek enake debeline. Obe strani začinite s soljo, črnim poprom, česnom v prahu in mleto papriko ter začimbe rahlo pritisnite na površino, da se enakomerno oprimejo.


  • 4. V ponvi na srednje močnem ognju segrejte rastlinsko olje, da se začne svetlikati. V ponev položite piščančji zrezek in ga na prvi strani pecite 4 do 5 minut, ne da bi ga premikali. Enkrat obrnite in na drugi strani pecite še 3 do 4 minute. Površina mora biti globoko zlato zapečena z barvo paprike, sredica pa mora doseči 74°C.


  • 5. Piščanca prenesite na desko in ga pustite počivati 3 minute. Tako bo zrezek ostal sočen, površina pa se bo umirila.


  • Serviranje


    Riž naložite v urejen kupček na eno stran krožnika. Poleg položite piščančji zrezek, narezan le po potrebi, da se vidi notranjost. Ob strani lepo razporedite kumarine palčke in zaključite z limoninim krhljem za stiskanje pri mizi. Krožnik mora delovati uravnoteženo, vitko in natančno.
