  • 10 g hidrolizata kolagena

  • Postupak


  • 1. Obložite mali pravougaoni kalup papirom za pečenje. Kalup treba da primi pločicu od približno 55 g u urednom, ravnomernom bloku.


  • 2. U posudi otpornoj na toplotu sjedinite mlečni protein, hidrolizat kolagena, zaslađivač, punomasno mleko u prahu, so, aromu i emulgator. Temeljno mešajte 1 minut, dok se praškasti sastojci ravnomerno ne rasporede i mešavina ne postane ujednačene boje.


  • 3. Dodajte glicerol i mešajte špatulom 1 minut. Smesa treba da počne da se skuplja u glatku, podatnu pastu bez suvih delova.


  • 4. U maloj šerpi na tihoj vatri otopite zajedno kakao puter, kakao masu i suncokretovo ulje tokom 2 do 3 minuta, lagano mešajući dok smesa ne postane potpuno tečna i sjajna. Sklonite sa vatre čim smesa postane homogena; nemojte je pregrejati.


  • 5. Sipajte otopljenu masnu fazu u proteinsku smesu i energično mešajte 1 do 2 minuta, dok masa ne postane glatka, kompaktna i blago lepljiva. Na kraju umešajte sojin crisp, samo dok se ravnomerno ne rasporedi i ostane netaknut.


  • 6. Utisnite smesu u pripremljeni kalup u jednom sloju. Čvrsto je sabijte špatulom tako da površina bude ravna, a ivice uredne. Pločica treba da deluje zbijeno i povezano, sa hrskavim komadićima raspoređenim kroz celu masu, a ne smrvljenim.


  • 7. Ohladite u frižideru 1 sat, ili dok se pločica potpuno ne stegne i ne postane čvrsta na dodir. Treba lako da se izvadi iz kalupa i da zadrži ravnu ivicu kada se izvadi.


  • Serviranje i posluživanje


    Izvadite pločicu iz kalupa i poslužite je celu, ili je isecite oštrim nožem za čist presek. Završni izgled treba da bude gladak i kompaktan, sa vidljivim hrskavim dodacima i suzdržanim sjajem kakaa.
