  • Postupak


  • 1. Po potrebi obložite kalup papirom za pečenje i stavite ga na ravnu tacnu. Kalup mora biti suv i spreman pre nego što se smesa napravi.

  • 2. U posudi otpornoj na toplotu pomešajte mlečni protein, hidrolizat kolagena, zaslađivač, punomasno mleko u prahu, sojin protein i so. Mešajte špatulom dok se praškasti sastojci ravnomerno ne rasporede i dok ne nestanu svetlije pruge.

  • 3. U maloj šerpi na veoma tihoj vatri istopite kakao puter sa suncokretovim uljem i puterom od kikirikija, neprestano mešajući 2 do 3 minuta, dok smesa ne postane glatka, sjajna i potpuno tečna. Ne dozvolite da zagori.

  • 4. Dodajte humektant u toplu masnu smesu i mešajte dok se potpuno ne sjedini. Smesa treba da izgleda ujednačeno i blago zgusnuto.

  • 5. Sipajte toplu tečnu smesu preko suvih sastojaka. Preklapajte i pritiskajte špatulom 1 do 2 minuta, dok se ne formira gusta, kompaktna pasta. Dodajte seckani kikiriki i promešajte samo dok se ravnomerno ne rasporedi.

  • 6. Prebacite smesu u pripremljeni kalup. Čvrsto i ravnomerno je utisnite u sve uglove, uklanjajući vazdušne džepove i sabijajući pločicu u kompaktan blok. Poravnajte površinu špatulom.

  • 7. Ohladite 10 minuta, ili dok pločica ne postane čvrsta na dodir i dok se uredno ne odvaja od kalupa. Gotova pločica treba da bude gusta, savitljiva i da se seče čistom ivicom, a ne da se mrvi.


  • Serviranje i posluživanje


    Izvadite pločicu iz kalupa i poslužite je celu na uskom tanjiru ili dasci obloženoj papirom za pečenje. Poslužite na prohladnoj sobnoj temperaturi radi najuravnoteženije teksture: čvrsta po ivici, podatna u sredini, pri čemu se aroma kikirikija prvo otvara, a so dolazi jasno u završnici.
