Uvod


Ovo je klasična poslastica koja zahteva uzdržanost i preciznost: nugat koji je lagan pri zagrizu, a ipak dovoljno čvrst da se uredno seče. Bademi daju strukturu i toplinu, dok med, glukozni sirup i šećer grade finu, stabilnu žvakavost bez zrnaste teksture. Oblatni papir daje ploči urednu završnicu i čuva čistu geometriju koja se očekuje od pravih konditorskih proizvoda.

  • Postupak


  • 1. Obložite dno pleha ili rama oblatnim papirom, pažljivo ga skraćujući tako da leži ravno bez preklapanja. Ostavite pleh sa strane na površini otpornoj na toplotu.


  • 2. Stavite bademe u suv tiganj na srednju temperaturu i zagrevajte 3 do 4 minuta, neprestano mešajući, dok ne zamirišu i blago ne potamne. Odmah ih prebacite u činiju kako ne bi nastavili da se peku.


  • 3. Pomešajte šećer, glukozni sirup i med u šerpi. Stavite na srednju temperaturu i kuvajte bez mešanja 6 do 8 minuta, skidajući kristale sa stranica samo ako je potrebno, dok sirup ne dostigne 145°C i ne postane bistar i aktivno peni.


  • 4. Dok se sirup kuva, počnite da mutite belance u samostojećem mikseru na srednjoj brzini. Dodajte so i nastavite mućenje dok belance ne formira meke, vazdušaste vrhove.


  • 5. Dok mikser radi na srednjoj brzini, sipajte vruć sirup u ravnomernom mlazu niz stranu posude. Nastavite da mutite 6 do 8 minuta, dok smesa ne postane gusta, sjajna i topla, a ne vrela na dodir.


  • 6. Dodajte ekstrakt vanile i kratko umutite da se sjedini. Špatulom umešajte tople bademe, radeći odlučno kako bi bili ravnomerno raspoređeni bez izduvavanja nugata.


  • 7. Prebacite nugat u pripremljeni pleh i špatulom ga ravnomerno rasporedite do uglova. Pritisnite drugi list oblatnog papira preko površine, nežno ga poravnavajući tako da ploča bude ravna i zatvorena.


  • 8. Ostavite nugat na sobnoj temperaturi 2 do 3 sata, dok se ne stegne dovoljno da može uredno da se seče oštrim nožem. Gotova ploča treba da bude čvrsta, elastična i blago popustljiva pod pritiskom, a ne lepljiva na preseku.


  • Serviranje i izlaganje


    Isecite ploču na uredne pravougaonike ili štapiće vrelim, suvim nožem. Poslužite komade poravnate, sa čistim ivicama i vidljivim rasporedom badema, tako da oblatni papir ostane diskretan i neoštećen.
