  • 1. Uredno obložite kalup i stavite ga na mali pleh. U činiji sjedinite mlečni protein, hidrolizat kolagena, zaslađivač, so i aromu. Mešajte dok se ravnomerno ne rasporede i dok ne ostanu svetlije pruge.


  • 2. Zagrejte palminu mast samo dok ne postane tečna, oko 40°C. Dodajte je u suvu mešavinu i umešajte špatulom dok masa ne postane povezana, gusta i blago savitljiva. Na kraju pažljivo umešajte sojin crisp, pazeći da komadi ostanu celi.


  • 3. Čvrsto utisnite smesu u kalup u ravnomernom sloju. Sabijte je odlučnim pritiskom tako da površina bude ravna, a telo kompaktno. Ohladite 10 minuta, dok pločica ne bude čvrsta na dodir.


  • 4. Sjedinite preliv od mlečne čokolade, kakao puter, kakao masu i emulgator u posudi otpornoj na toplotu. Lagano otopite iznad jedva ključale vode, mešajući dok smesa ne postane glatka i sjajna, bez vidljivih granula. Temperatura treba da ostane tek toliko topla da lepo teče, a da ne postane retka ili masna.


  • 5. Izvadite ohlađenu pločicu iz kalupa i stavite je na pleh. Ravnomerno je obložite čokoladnom smesom, okrećući jednom da se prekriju sve strane. Ostavite da višak otekne, pa položite pločicu na papir za pečenje ili ohlađen pleh. Završite preostalom solju dok je preliv još lepljiv.


  • 6. Hladite 8 do 10 minuta, dok se preliv ne stegne, ne postane mat po ivicama i ne zvuči oštro na dodir. Gotova pločica treba uredno da zadrži oblik i da pruži jasan hrskav prelom pre nego što popusti ka gustom, žvakastom središtu.


  • Serviranje i posluživanje


    Poslužite pločicu celu, postavljenu po sredini uskog tanjira ili daske obložene papirom za pečenje. Preliv treba da ostane gladak i neoštećen, a so vidljiva samo kao fini završni sloj. Poslužite hladno ili rashlađeno, tako da opna puca čisto, a unutrašnjost ostane kompaktna.
