  • Postupak



  • 1. Pripremite arome.

  • Isecite đumbir na fini julijen. Tanko isecite beli luk. Odvojite bele delove mladog luka od zelenih i oba dela sitno isecite. Držite arome odvojeno kako bi ravnomerno i jasno oslobodile svoj miris.

  • 2. Začinite ribu.

  • Osušite crvenog snappera tapkanjem i stavite ga na tanjir otporan na toplotu. Rasporedite đumbir, beli luk i beli deo mladog luka preko i oko ribe. Pomešajte soja sos i šećer, pa kašikom ravnomerno prelijte preko ribe i tanjira. Površina treba da bude lagano glazirana, ne preplavljena.

  • 3. Kuvajte na pari nežno.

  • Dovedite aparat za kuvanje na pari do ravnomernog ključanja. Stavite tanjir, poklopite i kuvajte na pari 7 do 8 minuta, u zavisnosti od debljine. Riba je gotova kada meso postane neprozirno, odvaja se u čiste listiće na najdebljem delu i ostaje sočno i tek blago čvrsto.

  • 4. Završite uljem.

  • Dok se riba kuva na pari, zagrejte biljno ulje u maloj šerpi dok ne postane vrelo i svetlucavo, ali ne do tačke dimljenja. Arome ne treba agresivno pržiti; ulje treba samo da prenese toplotu i miris.

  • 5. Dovršite i servirajte.

  • Izvadite tanjir iz aparata za kuvanje na pari. Rasporedite zeleni deo mladog luka preko ribe, zatim ravnomerno prelijte vrelo ulje preko aroma i izloženog mesa. Površina treba kratko da zacvrči i zatim se smiri u sjajan završetak. Poslužite odmah.
