  • Svinjetina, 120 g, očišćena i istučena na ravnomernu debljinu od 5 mm

  • Postupak


  • 1. Stavite svinjetinu između listova papira za pečenje ili u čistu kesu i istucite je ravnomerno na debljinu od 5 mm. Šnicla treba da bude široka, ujednačena i gipka, bez pocepanih ivica.

  • 2. Začinite obe strane svinjetine solju i crnim biberom. Ostavite da stoji 2 minuta kako bi se začini na površini slegli u meso.

  • 3. Pripremite tri plitke posude. U prvu stavite pšenično brašno, u drugu umućeno jaje, a u treću prezle.

  • 4. Uvaljajte svinjetinu u brašno, okrećući je da se obloži sa svih strana. Otresite višak; sloj treba da bude tanak i suv.

  • 5. Umočite pobrašnjenu svinjetinu u jaje, tako da bude potpuno obložena. Podignite i pustite da višak otekne 2 do 3 sekunde.

  • 6. Utisnite svinjetinu u prezle, jednom je okrenite i lagano pritisnite kako bi se korica ravnomerno zalepila. Površina treba da bude potpuno prekrivena, bez teških grudvica.

  • 7. Zagrejte biljno ulje u tiganju na srednjoj vatri dok ne dostigne 170°C. Ulje treba ravnomerno da svetluca, ali ne da dimi.

  • 8. Spustite pohovanu svinjsku šniclu u tiganj i pržite 3 do 4 minuta sa prve strane, dok donja strana ne postane tamnozlatna i hrskava.

  • 9. Pažljivo okrenite šniclu i pržite još 3 minuta, dok druga strana ne porumeni ravnomerno i svinjetina ne dostigne unutrašnju temperaturu od 63°C. Korica treba jasno da hruska, a meso da bude tek čvrsto na dodir.

  • 10. Prebacite šniclu na žičanu rešetku ili pleh obložen papirom i ostavite da odmori 2 minuta. Poh treba da ostane suv i neoštećen, a sokovi da se slegnu pre serviranja.
