Ovo je klasik u svom najdisciplinovanijem obliku: podatno pšenično testo, čista osnova od paradajza, mlečna mocarela i bosiljak dodat tek na kraju kako bi njegov miris ostao netaknut. Ravnoteža zavisi od uzdržanosti; svaki element mora ostati jasan, a ipak celina mora delovati kao jedno. Kada je pravilno pripremljena, korica je lagana po obodu, nežna iznutra i obeležena toplotom rerne.

  • Postupak



  • 1. Pomešajte pšenično brašno, kvasac i so u posudi za mešanje. Dodajte vodu i maslinovo ulje, pa mešajte dok više ne ostane suvog brašna. Testo će izgledati grubo i biće blago lepljivo.


  • 2. Prebacite testo na čistu radnu površinu i mesite 8 do 10 minuta, dok ne postane glatko, elastično i blago opružno pod prstima. Trebalo bi da se razvlači bez lakog cepanja i da deluje podatno, a ne zategnuto.


  • 3. Vratite testo u posudu, pokrijte i ostavite na sobnoj temperaturi 60 minuta, ili dok se vidljivo ne poveća i ne ispuni vazduhom. Trebalo bi da deluje lakše i da zadrži blago udubljenje kada ga pritisnete.


  • 4. Podesite rernu na 250°C i ostavite da se potpuno zagreje najmanje 20 minuta. Ako koristite kamen ili čeličnu ploču za picu, stavite je u rernu tokom zagrevanja.


  • 5. Oblikujte testo u okruglu osnovu prečnika 30 cm na blago pobrašnjenoj površini, tako da ivica ostane malo deblja od sredine. Prebacite ga na pleh ili lopaticu bez pritiskanja oboda.


  • 6. Ravnomerno rasporedite paradajz sos preko testa, ostavljajući uzak čist rub. Rasporedite mocarelu preko sosa, zatim začinite solju. Završite maslinovim uljem u tankom, ravnomernom mlazu.


  • 7. Pecite 8 do 10 minuta, dok korica ne dobije duboku zlatnu boju po ivicama, osnova se potpuno ne ispeče, a mocarela se ne istopi uz poneku zapečenu tačku. Sredina treba da ostane nežna, ne mokra.


  • 8. Izvadite picu iz rerne i odmah rasporedite bosiljak po površini. Ostavite da odstoji 1 minut pre sečenja kako bi se sir slegao, a aroma otvorila.


  • Serviranje


    Poslužite picu celu, pa je zatim isecite na jednake parčiće. Korica treba da uokviri svetao sloj paradajza, rastopljeni sir i svež bosiljak, dok maslinovo ulje treba da daje sjaj, a ne težinu.

    Koristite mocarelu štedljivo; višak vlage će omekšati sredinu i zamagliti strukturu. Bosiljak ide posle pečenja, nikada pre, kako bi njegov ukus ostao izražen i čist. Potpuno zagrejana rerna je neophodna za hrskavu osnovu i pravilno narastanje testa u pečenju.
