  • Postupak


  • 1. Obložite kalup i stavite ga nadohvat ruke. U maloj činiji pomešajte mlečni protein, hidrolizovani kolagen, zaslađivač, punomasno mleko u prahu i so, pa ih zajedno prosejte kako biste uklonili sve grudvice. Mešavina treba da bude fina, svetla i ravnomerno sjedinjena.

  • 2. Otopite palminu mast, kakao puter i kakao masu zajedno u maloj šerpi na veoma tihoj vatri, mešajući samo dok smesa ne postane glatka i tečna. Sklonite sa vatre čim se kakao masa potpuno rastopi; smesa treba da bude sjajna i topla, ne vrela.

  • 3. Umešajte sojin lecitin i aromu u otopljenu masnu smesu dok se potpuno ne rasporede. Dodajte suvu mešavinu i špatulom je umešajte dok se ne formira gusta, ujednačena pasta. Na kraju pažljivo umešajte seckani lešnik kako bi ostao jasno primetan u gotovoj pločici.

  • 4. Čvrsto utisnite smesu u pripremljeni kalup u jednom ravnom sloju. Sabijte je odlučnim pritiskom tako da površina postane ravna i kompaktna, bez vidljivih praznina uz ivice.

  • 5. Ohladite 10 minuta, ili dok se pločica potpuno ne stegne i ne postane čvrsta na dodir. Gotova tekstura treba da bude gusta, kompaktna i da se čisto vadi iz kalupa bez mrvljenja.

    Izvadite pločicu iz kalupa i poslužite je celu na malom tanjiru ili tacni obloženoj papirom za pečenje. Površina treba da ostane glatka i zategnuta, sa lešnikom vidljivim kao finim prekidom i notom kakaa koja ostaje suzdržana.
