    Pizzabasis en bolaag



  • 180 g koringmeelkors

  • 70 g tamatiesous

  • 110 g mozzarella-kaas, gerasper

  • 70 g hoenderbors

  • 35 g rooi soetrissie, dun gesny

  • 8 g olyfolie

  • 3 g knoffel, fyn gerasper

  • 1 g origanum, gedroog

  • 1 g swartpeper, fyn gemaal


  • Metode



  • 1. Voorverhit die oond tot 250°C en plaas ’n pizzabakplaat of baksteen binne om vir 20 minute te verhit. Die oppervlak moet heeltemal warm wees sodat die kors vinnig set en bros bak eerder as bleek.


  • 2. Geur die hoenderbors met 1 g swartpeper en 1 g origanum. Verhit 4 g olyfolie in ’n klein kastrol oor matige hitte, voeg die knoffel by, en roer vir 20 sekondes totdat dit geurig is maar nie verkleur nie. Voeg die hoender by en kook vir 4 tot 5 minute, draai een keer om, totdat dit net-net gaar is en die oppervlak liggies ondeursigtig is. Haal uit en sny dun.


  • 3. Rol die koringmeelkors in ’n dun sirkel uit en hou die dikte egalig. Die deeg moet soepel bly maar sigbaar maer wees, sonder ’n dik rand wat oortollige gewig sou vasvang.


  • 4. Smeer die tamatiesous in ’n dun, egalige laag oor die kors en laat ’n smal rand skoon. Versprei die mozzarella eweredig oor die sous, en rangskik dan die gesnyde hoender en rooi soetrissie oor die oppervlak sodat die bolae gebalanseerd en nie oorvol is nie.


  • 5. Bedruip die bokant liggies met die oorblywende 4 g olyfolie. Plaas die pizza op die voorverhitte bakplaat of baksteen en bak vir 10 tot 12 minute, totdat die kors goudbruin aan die rande is, die kaas heeltemal gesmelt en liggies geblaseer is, en die basis bros is wanneer dit opgelig word.


  • 6. Haal die pizza uit en laat dit vir 2 minute rus voordat dit gesny word. Hierdie kort pouse laat die kaas set en help die kors om sy struktuur te behou.
