Inleiding


Hierdie gereg berus op terughoudendheid: behoorlik verbruin hoender, sampioene wat tot 'n diep hartigheid gaargemaak is, en 'n roomsous wat verminder is tot 'n punt van stille rykheid.   • Sampioen, skoongemaak en gesny, 45 g

  • Dik room, 40 g

  • Sout, 1 g

  • Swartpeper, 1 g


  • Metode


  • 1. Dep die hoenderbors droog en geur dit eweredig met 2 g sout en 1 g swartpeper. Laat dit vir 5 minute staan sodat die geurmiddels die oppervlak begin indring.

  • 2. Plaas die soteerpan oor medium-hoë hitte. Voeg die olyfolie en 6 g van die botter by. Wanneer die botter skuim en dan bedaar, plaas die hoenderbors in die pan. Braai vir 3 minute aan die eerste kant, dan 2 tot 3 minute aan die tweede kant, totdat dit liggies verbruin is en die vleis veerkragtig maar steeds soepel voel. Plaas oor op 'n bord en hou warm.

  • 3. Verlaag die hitte na medium. Voeg die oorblywende 6 g botter by, dan die ui. Kook vir 2 minute terwyl jy aanhoudend roer, totdat dit deurskynend en geurig is maar nie verkleur nie.

  • 4. Voeg die knoffel by en kook vir 20 sekondes, net totdat dit aromaties is. Voeg die sampioen en 'n knippie van die oorblywende sout by. Kook vir 4 tot 5 minute, roer af en toe, totdat die sampioene hul vog vrygestel het en 'n goue rand begin kry.

  • 5. Giet die dik room in en bring dit tot 'n sagte prut. Kook vir 2 tot 3 minute terwyl jy roer, totdat die sous die agterkant van die lepel liggies bedek en 'n soepel, glansende konsekwentheid het. Geur met die oorblywende sout en swartpeper.

  • 6. Plaas die hoender en enige sappe wat gerus het terug in die pan. Skep die sous oor die hoender en laat dit saggies vir 1 minuut prut, net totdat die hoender deurwarm is en die sous in 'n gladde laag kleef. Die hoender moet sappig en heeltemal ondeursigtig in die middel bly.


  • Uitplatering en bediening


    Plaas die hoender effens uit die middel op 'n warm bord en skep die sampioenroomsous daaroor. Rangskik die sampioene eweredig oor en rondom die bors sodat die sous doelbewus aangebied lyk, nie oorvloedig uitgegiet nie. Bedien onmiddellik terwyl die sous glansend is en die hoender sag bly.
