Inleiding



Hierdie is ’n eenvoudige, helder pastagereg gebou op groen intensiteit en die stille soetheid van songedroogde tamatie. Die pesto is doelbewus los genoeg om te bedek, maar tog gestruktureerd genoeg om in ’n fyn, glansende lagie aan die spaghetti te kleef. ’n Ingehoue hand met knoffel, chili en swartpeper hou die gereg helder, reguit en gebalanseerd.

  • Metode



  • 1. Bring ’n groot pot water tot ’n volle kookpunt en voeg die sout by. Die water moet duidelik gegeur smaak. Voeg die spaghetti by en kook vir 8 tot 10 minute, roer een of twee keer aan die begin, totdat die pasta net sag is met ’n ferm middel en geen melerigheid nie.


  • 2. Terwyl die pasta kook, kombineer die pietersielie, spinasie, songedroogde tamatie, knoffel, parmesaan, rooirissievlokkies, swartpeper en olyfolie in ’n klein voedselverwerker. Verwerk tot ’n growwe, skepbare pesto met sigbare spikkels groen en rooi. Die tekstuur moet los genoeg wees om die pasta te bedek sonder om olierig te word.


  • 3. Hou 30 g van die pastawater terug en dreineer dan die spaghetti goed. Plaas dit onmiddellik in ’n groot soteerpan oor lae hitte.


  • 4. Voeg die pesto en 20 g van die teruggehoue pastawater by die spaghetti. Meng aanhoudend vir 1 tot 2 minute totdat die sous emulgeer en in ’n dun, glansende lagie kleef. Voeg die oorblywende teruggehoue water slegs by indien nodig om die pasta soepel en liggies bedek te hou. Die voltooide spaghetti moet sag, goed gegeur en egalig bedek wees, nie nat nie.


  • 5. Proe en pas slegs aan met die bestaande geurmiddelbalans in die pan deur nog ’n paar sekondes langer te meng indien die sous meer samehang nodig het. Verwyder van die hitte sodra die pasta satynagtig omhul lyk en die pesto geurig is.


  • Uitplatering en bediening



    Draai die spaghetti in ’n vlak hopie in die middel van ’n warm bord. Skep enige oorblywende pesto eweredig bo-oor, sodat die groen sous en songedroogde tamatie sigbaar bly. Bedien onmiddellik terwyl die pasta glansend is en die aroma van knoffel, kruie en chili vars is.
