Inleidende nota
Hierdie braai berus op ingetoënheid: varkvleis wat diep gegeur is, en dan gedra word deur knoffel, sojasous, chili en ’n afgemete soetheid van bruinsuiker. Die marinade is reguit en gekonsentreerd, en gee die vleis ’n gelakte oppervlak en ’n hartige hitte wat gebalanseerd bly eerder as aggressief. As dit behoorlik gerus en netjies opgesny bedien word, is dit ’n gereg van helderheid, nie oordaad nie.

Metode
  • 1. Meng die knoffel, sojasous, chilisous, bruinsuiker, groente-olie, paprika, swartpeper en sout in ’n klein bakkie. Roer totdat die suiker opgelos is en die mengsel homogeen is, sonder enige sigbare droë speserye.


  • 2. Plaas die varkbraai in ’n groot bak of vlak skottel en bedek dit deeglik met die marinade. Draai die vleis verskeie kere sodat elke oppervlak eweredig bedek is. Bedek en marineer vir 45 minute by kamertemperatuur, of tot 8 uur in die yskas indien tyd dit toelaat.


  • 3. Verhit die oond tot 190°C. Plaas ’n draadrak binne-in ’n braaipan. Lig die vark uit die marinade en laat die oortollige marinade afdrup; behou die marinade wat aan die vleis oorbly. Plaas die braai op die rak, met die vetkant bo indien van toepassing.


  • 4. Braai vir 1 uur 10 minute tot 1 uur 20 minute, en bedruip een keer halfpad met die pansappe. Die oppervlak moet diep mahoniebruin, effens klewerig en geurig word, terwyl die binnetemperatuur 68°C by die dikste punt bereik.


  • 5. Haal die vark uit die oond, tent dit losweg met foelie, en laat dit vir 15 minute rus. Gedurende hierdie rustyd moet die sappe setel en die oppervlakglans ongeskonde bly eerder as nat.


  • 6. Sny die braai dwars teen die grein in netjiese skywe. Skep enige opgegaarde sappe oor die vleis voordat dit opgedien word.


  • Opdien en bediening
    Rangskik die skywe in ’n netjiese, effens oorvleuelende lyn of waaier. Lepel net genoeg pansappe oor om die vleis te laat glans, terwyl die rande sigbaar bly en die glanslaag duidelik omskryf is. Bedien warm, met die chili-knoffel-karakter wat op die oppervlak gekonsentreer is en die varkvleis wat binne-in sappig en ferm bly.
