Paleta de cerdo al estilo Sichuan con marinada de aceite de chile

Un plato de cerdo marinado intenso y sabroso con ajo, salsa de soja, aceite de chile y especias cálidas. Se sirve mejor como preparación marinada cruda solo si el cerdo se manipula de forma segura y procede de una fuente apta para el consumo en crudo; de lo contrario, debe cocinarse.

Ingredientes
  • Paleta de cerdo: 750 g

  • Ajo: 30 g

  • Aceite de chile: 60 ml

  • Salsa de soja: 40 ml

  • Copos de chile rojo: 5 g

  • Pimienta negra: 3 g

  • Sal: 7 g

  • Azúcar: 5 g


  • Peso total: 900 g

    Instrucciones
  • 1. Pica finamente el ajo.

  • 2. En un bol, mezcla el ajo, el aceite de chile, la salsa de soja, los copos de chile rojo, la pimienta negra, la sal y el azúcar.

  • 3. Añade la paleta de cerdo y mezcla bien hasta que quede uniformemente cubierta.

  • 4. Cubre y deja marinar en el refrigerador durante al menos 2 horas, preferiblemente toda la noche.

  • 5. Sirve frío o a temperatura ambiente si se va a consumir como plato marinado crudo, o cocina bien el cerdo antes de servir si lo prefieres.
