  • Govedina, očišćena i narezana na komade od 4 cm: 600 g

  • Maslac: 40 g

  • Srebrni luk, tanko narezan: 80 g

  • Postupak



  • 1. Pripremite osnovu za pirjanje.

  • Zagrijte Dutch oven na srednje jakoj vatri. Dodajte maslac i pustite da zapjeni, pa da se pjena slegne. Dodajte srebrni luk i kuhajte 6 do 8 minuta, često miješajući, dok ne postane proziran i lagano sladak, bez tamnjenja.

  • 2. Zapecite govedinu.

  • Pojačajte vatru na srednje jaku do jaku. Dodajte govedinu u jednom sloju i dobro je zapecite sa svih strana, ukupno oko 8 do 10 minuta. Površina treba biti duboko obojena i aromatična; nemojte pretrpati lonac.

  • 3. Napravite tekućinu za pirjanje.

  • Dodajte crno vino i rouge te temeljito sastružite dno. Kuhajte 4 do 5 minuta, dok tekućina ne izgubi sirovu alkoholnu notu i ne zamiriše zaokruženo i koncentrirano.

  • 4. Pirjajte.

  • Dodajte goveđi temeljac i biserni luk. Pustite da lagano zakuha, zatim poklopite i premjestite u pećnicu zagrijanu na 160°C. Pirjajte 2 sata i 30 minuta, okrećući govedinu jednom na polovici vremena, dok meso ne popusti lako pod vilicom, ali i dalje zadržava oblik.

  • 5. Dovršite umak.

  • Izvadite lonac iz pećnice i otklopite. Umiješajte masline i bademe. Lagano kuhajte na štednjaku 10 do 15 minuta, dok umak lagano ne obloži stražnju stranu žlice i luk ne omekša do kraja.

  • 6. Prilagodite završnu teksturu.

  • Ako je umak prerijedak, kratko ga reducirajte na srednje jakoj vatri. Ako je pregust, razrijedite ga malom količinom goveđeg temeljca. Gotovo pirjano jelo treba biti sjajno, povezano i takvo da se može posluživati žlicom, a ne teško.

    Rasporedite govedinu u plitku zagrijanu zdjelu i ravnomjerno oko nje rasporedite biserni luk, masline i bademe. Žlicom prelijte umak preko i oko mesa tako da površina ostane sjajna, ali ne potopljena. Poslužite odmah, uz precizno očuvanu ravnotežu punoće, slatkoće i slanoće.
