Postupak


  • 1. Zakuhajte mali lonac posoljene vode do laganog vrenja. Dodajte krumpir i kuhajte 8 do 10 minuta, dok ne omekša taman do sredine, a da i dalje zadrži oblik. Dobro ocijedite i držite na toplom.


  • 2. Istu vodu ponovno dovedite do laganog vrenja. Dodajte šparoge i kuhajte 2 do 3 minute, dok ne postanu živo zelene i lagano mekane. Tikvicu dodajte tijekom posljednje 1 minute. Ocijedite oba povrća i ostavite sa strane.


  • 3. Prerežite rep jastoga uzdužno kroz oklop i meso. Posušite kuhinjskim papirom. Zagrijte tavu za pirjanje na srednjoj vatri i dodajte rep jastoga, najprije stranom s oklopom prema dolje, pa pecite 2 minute. Okrenite i nastavite peći još 2 do 3 minute, lagano podlijevajući sokovima iz tave, dok meso ne postane neprozirno, tek čvrsto i još uvijek sočno. Prebacite na topli tanjur i ostavite da odmori 2 minute.


  • 4. U malom lončiću na laganoj vatri otopite maslac. Dodajte češnjak i kuhajte 30 sekundi, pazeći da ne dobije boju. Dodajte vrhnje za šlag i lagano kuhajte 2 minute, miješajući, dok umak ne postane gladak i lagano zgusnut. Dovršite limunovim sokom. Umak treba biti sjajan, blijed i dovoljno gust da obloži stražnju stranu žlice.


  • 5. Krumpir, šparoge i tikvicu nakratko vratite u tavu ili u umak, tek toliko da se ravnomjerno glaziraju, oko 30 sekundi. Nemojte ih previše obrađivati; trebaju ostati zasebni i čiste teksture.


  • Slaganje na tanjur i posluživanje


    Složite krumpir kao podlogu na tanjuru, zatim uz njega u urednoj liniji položite šparoge i tikvicu. Rep jastoga stavite istaknuto u sredinu ili blago izvan središta, s izloženim mesom. Žlicom rasporedite umak od maslaca i vrhnja oko jastoga i lagano preko njega, tako da povrće ostane vidljivo, a tanjur skladan, ne preplavljen umakom.
