Uvod



Ovo je jednostavno, jasno jelo od tjestenine izgrađeno na zelenom intenzitetu i tihoj slatkoći sušene rajčice. Pesto je namjerno dovoljno rijedak da obloži tjesteninu, ali i dovoljno strukturiran da prione uz špagete u tankom, sjajnom sloju. Umjerena upotreba češnjaka, čilija i crnog papra održava jelo svježim, izravnim i uravnoteženim.

  • Postupak



  • 1. Zakuhajte veliki lonac vode do punog vrenja i dodajte sol. Voda treba imati jasno izražen okus začinjenosti. Dodajte špagete i kuhajte 8 do 10 minuta, promiješavši jednom ili dvaput na početku, dok tjestenina ne bude tek mekana, s čvrstom sredinom i bez brašnaste teksture.


  • 2. Dok se tjestenina kuha, u mali multipraktik stavite peršin, špinat, sušenu rajčicu, češnjak, parmezan, pahuljice crvene paprike, crni papar i maslinovo ulje. Usitnite u grublji pesto koji se može zahvaćati žlicom, s vidljivim zelenim i crvenim točkicama. Tekstura treba biti dovoljno rahla da obloži tjesteninu, ali ne toliko da postane masna.


  • 3. Sačuvajte 30 g vode od kuhanja tjestenine, zatim dobro ocijedite špagete. Odmah ih prebacite u veliku tavu za pirjanje na laganu vatru.


  • 4. Dodajte pesto i 20 g sačuvane vode od kuhanja tjestenine u špagete. Neprestano miješajte hvataljkom 1 do 2 minute, dok se umak ne emulgira i ne prione u tankom, sjajnom sloju. Dodajte preostalu sačuvanu vodu samo ako je potrebno da tjestenina ostane podatna i lagano obložena. Gotovi špageti trebaju biti mekani, dobro začinjeni i ravnomjerno obloženi umakom, a ne mokri.


  • 5. Kušajte i prilagodite samo postojećom ravnotežom začina u tavi tako da miješate još nekoliko sekundi ako umaku treba više povezanosti. Maknite s vatre čim tjestenina dobije satenski sjaj, a pesto zamiriše.

    Uvijte špagete u plitki humak na sredini toplog tanjura. Ravnomjerno žlicom rasporedite sav preostali pesto po vrhu, tako da zeleni umak i sušena rajčica ostanu vidljivi. Poslužite odmah, dok je tjestenina sjajna, a aroma češnjaka, začinskog bilja i čilija svježa.
