  • 150 g pšenične moke

  • 90 g vode

  • 3 g kvasa

  • 3 g sladkorja

  • 3 g soli

  • 8 g oljčnega olja

  • 40 g sira mocarela

  • 25 g paradižnika, na tanko narezanega

  • Postopek



  • 1. V mešalni skledi združite pšenično moko, kvas, sladkor in sol. Dodajte vodo in oljčno olje, nato mešajte, dokler ne nastane grobo testo. Gnetite 8 minut, da postane gladko, elastično in nelepljivo. Pokrijte in pustite počivati 45 minut, da se vidno poveča in postane voljno.


  • 2. Medtem ko testo počiva, piščančje prsi začinite s soljo. Ponev segrejte na srednji temperaturi, dodajte oljčno olje in piščanca pecite 4 do 5 minut na vsaki strani. Površina mora biti rahlo zlato zapečena, sredica pa popolnoma neprosojna. Pustite počivati 5 minut, nato tanko narežite.


  • 3. Pečico segrejte na 250°C. Če uporabljate pekač, ga prav tako postavite v pečico, da se segreje; dno testa mora priti na vročo površino, da se lepo speče.


  • 4. Testo razvaljajte v krog s premerom približno 25 cm, pri čemer naj bo sredina nekoliko tanjša od roba. Prenesite ga na pekač. Paradižnikovo omako razporedite v tanki, enakomerni plasti, pri robu pa pustite ozek prazen pas.


  • 5. Narezanega piščanca enakomerno razporedite po omaki. Dodajte mocarelo v uravnoteženi plasti, nato po vrhu razporedite rezine paradižnika. Zaključite z origanom.


  • 6. Pecite 10 do 12 minut, dokler ni skorja ob robovih lepo zapečena, dno popolnoma pečeno, mocarela pa povsem stopljena in mestoma rahlo zlata. Paradižnik se mora zmehčati, ne da bi se popolnoma sesedel.


  • Serviranje


    Pico prenesite na desko ali velik krožnik in jo pred rezanjem pustite stati 1 minuto. Postrezite v čistih kosih, s piščancem, enakomerno razporejenim, in s površino, ki je sijoča, vendar ne mokra. Končna pica mora biti hrustljava ob robu, mehka v sredini ter uravnotežena med kislostjo paradižnika, mlečno bogatostjo in slastno globino piščanca.
