  • Postopek


  • 1. Pripravite hrustljavo sredico. V majhni skledi zmešajte pšenično moko, izomalto-oligosaharid, sončnično olje, razmaščen kakav v prahu in emulgator. Mešajte, dokler ni zmes enakomerno navlažena in peščena. Razporedite jo v tanki plasti na majhen pladenj in pecite pri 160°C 6 do 8 minut, pri čemer jo enkrat na polovici peke premešajte, da postane suha, hrustljava in rahlo popečena. Popolnoma ohladite; tekstura mora biti krhka, ne mehka.


  • 2. Pripravite proteinski nadev. V skledi zmešajte mlečne beljakovine, kolagenski hidrolizat, sojine beljakovine, polnomastno mleko v prahu, sladilo, glicerol, izomalto-oligosaharid, sol in aromo. Temeljito mešajte, dokler masa ne postane povezana in gladka. Ob pritisku mora držati skupaj in biti voljna, brez ostankov suhega prahu.


  • 3. Oblikujte ploščico. Polovico proteinskega nadeva vtisnite v model v enakomerni plasti. Po njem potresite ohlajeno hrustljavo sredico, pri robovih pa pustite ozek pas. Pokrijte s preostalim proteinskim nadevom in čvrsto pritisnite, da se zapre. Površina mora biti ravna in kompaktna.


  • 4. Ohladite. Oblikovano ploščico postavite v hladilnik za 20 minut, da se dovolj učvrsti za čisto jemanje iz modela brez deformacij.


  • 5. Pripravite preliv. Kakavovo maslo, kakavovo maso, olje palmovih jedrc, polnomastno mleko v prahu, sladilo, razmaščen kakav v prahu, emulgator in aromo skupaj stopite na blagem ognju ter mešajte, dokler ni zmes gladka in sijoča. Preliv mora biti tekoč, enoten in brez zrnatosti.


  • 6. Prelijte ploščico. Ohlajeno ploščico vzemite iz modela in jo položite na rešetko ali pladenj. Preliv enakomerno prelijte ali razmažite po površini; po potrebi jo enkrat obrnite, da prekrijete vse strani. Pustite, da odvečni preliv odteče. Zaključek mora biti tanek in enakomeren, z čistim robom.


  • 7. Utrdite. Oblečeno ploščico vrnite v hladilnik za 10 do 12 minut, dokler se preliv popolnoma ne strdi in ploščica ni čvrsta po vsej strukturi.


  • Serviranje in postrežba


    Ploščico postrezite ohlajeno ali pri hladni sobni temperaturi. Postrezite jo celo na ozkem krožniku ali jo čisto prerežite po diagonali, da razkrijete hrustljavo sredico. Zaključek mora biti sijoč, robovi urejeni, notranjost pa jasno plastena.
