  • Postopek


  • 1. Majhen model za ploščico po potrebi obložite s papirjem za peko in ga postavite na stran. Vse sestavine stehtajte in razporedite po navedenem vrstnem redu; ta zmes se po združitvi hitro strdi.


  • 2. V majhni kozici združite mlečne beljakovine, kolagenski hidrolizat, polidekstrozo, glicerol, sladila, vodo, mleko v prahu, sol, naravno aromo in emulgator. Segrevajte na nizkem ognju 2 do 3 minute in neprestano mešajte, dokler zmes ne postane gladka, sijoča in dovolj gosta, da na lopatki ohrani mehke grebene. Ne pustite, da zavre.


  • 3. V majhni posodi združite sojine hrustljavčke, pšenično moko in sončnično olje. Mešajte, dokler hrustljavčki niso rahlo prevlečeni in moka ni več videti suha. To zmes nežno vmešajte v toplo proteinsko osnovo in mešajte le toliko, da se enakomerno porazdeli.


  • 4. Zmes trdno pritisnite v pripravljen model in jo stisnite s hrbtno stranjo žlice ali majhno lopatko. Površina mora biti ravna, gosta in brez zračnih žepkov. Hladite 10 minut, dokler ploščica ni dovolj čvrsta, da jo lahko lepo vzamete iz modela.
