  • Postopek


  • 1. Model po potrebi obložite s papirjem za peko in ga postavite na ravno podlago. Pred začetkom natančno stehtajte vse sestavine; ta ploščica je odvisna od natančnega ravnovesja.

  • 2. Pripravite čokoladni preliv: kakavovo maslo, kakavovo maso, polnomastno mleko v prahu, polidekstrozo, izomalto-oligosaharid, sladilo, sol in emulgator dajte v toplotno odporno posodo. Pripravite nadev: v majhni posodi združite mlečne beljakovine, kolagenski hidrolizat, polidekstrozo, izomalto-oligosaharid, kakavovo maslo, polnomastno mleko v prahu, sončnično olje, glicerol, naravno aromo, sladilo, sol in emulgator. Z lopatico odločno mešajte, dokler masa ne postane gladka, gosta in povezana, približno 2 minuti. Sojin hrustljavček vmešajte nazadnje, da ostane razločen in cel.

  • 5. Nadev naložite v strjeno lupino in ga enakomerno pritisnite, pri tem pazite, da ne poškodujete preliva. Sredica mora biti kompaktna, ravna in zapolnjena brez praznin.

  • 6. Nadev prekrijte s preostalo čokoladno zmesjo in ploščico popolnoma zatesnite. Površino z lopatico poravnajte in očistite, da bo vrh raven, robovi pa urejeni.

  • 7. Model hladite 10 do 12 minut, dokler ploščica ni popolnoma strjena in se lepo sprosti iz modela. Končana ploščica mora biti čvrsta, s hrustljavim prelomom v prelivu in mehkim, zračnim ugrizom v notranjosti.

    Ploščico vzemite iz modela in jo postavite na sredino navadnega krožnika ali deske, obložene s papirjem za peko. Postrezite pri hladni sobni temperaturi, da preliv ostane hrustljav, nadev pa se ob ugrizu lepo poda.
