  • 1. Model obložite s papirjem za peko, pri čemer pustite dovolj previsa, da boste lahko ploščico čisto dvignili. Model mora biti suh in dobro oblikovan, da se končna ploščica strdi z ostrimi robovi.


  • 2. V majhni skledi zmešajte mlečne beljakovine, kolagenski hidrolizat, sladilo, polnomastno mleko v prahu, izolat sojinih beljakovin, polidekstrozo, sol in emulgator. Temeljito premešajte z metlico 30 sekund, dokler suha mešanica ni enotna in brez vidnih grudic.


  • 3. Kakavovo maslo dajte v majhno kozico na zelo nizek ogenj in segrevajte le toliko, da se stopi, približno 2 minuti. Odstavite z ognja in vmešajte sončnično olje, glicerol, aromo in kakavovo maso, da zmes postane gladka in sijoča.


  • 4. Toplo maščobno fazo vlijte v suho mešanico. Z lopatico prepogibajte 1 do 2 minuti, dokler masa ni enakomerno navlažena in se ne začne združevati v gosto, prožno pasto. Tekstura mora biti povezana, ne drobljiva, in se mora ob pritisku držati skupaj.


  • 5. Mešanico prenesite v pripravljen model. Trdno in enakomerno jo potisnite v vse kote ter površino stisnite, da postane gladka in kompaktna. Pravilno oblikovana ploščica mora biti na otip gosta in pod pritiskom rahlo prožna.


  • 6. Hladite 2 uri oziroma dokler ni popolnoma strjena in čvrsta na dotik. Ploščica se mora čisto sprostiti iz modela in rezati brez mazanja.
