  • Postopek



  • 1. Majhen model za ploščico obložite tako, da bo površina gladka in enakomerna, ali pripravite ozek pravokoten model, v katerega bo šla 55 g ploščica. Pripravite ga pred mešanjem; nadev je treba oblikovati brez odlašanja.


  • 2. V posodi zmešajte mlečne beljakovine, kolagenski hidrolizat, polidekstrozo, arašide in sojin crisp. Temeljito premešajte, da se suhe sestavine enakomerno porazdelijo in da arašidi niso zbrani le na enem mestu.


  • 3. V majhni kozici na nizkem ognju 1 do 2 minuti segrevajte glicerol, vodo, karamelo in sol, le toliko, da zmes postane tekoča in se popolnoma poveže. Mešanica mora biti sijoča in topla, ne pa vreti.


  • 4. Toplo tekočino prelijte čez suho mešanico in z lopatico odločno prelagajte 1 do 2 minuti, dokler ne nastane gosta, voljna masa. Tekstura mora biti mehka, povezana in rahlo lepljiva, z arašidi in crispom enakomerno razporejenimi po vsej masi.


  • 5. Nadev vtisnite v model v eni plasti in ga močno stisnite, da ne ostanejo praznine. Površino poravnajte z lopatico in hladite 10 minut, da se dovolj utrdi za čisto rokovanje.


  • 6. Za preliv na nežni toploti skupaj stopite kakavovo maslo, olje palmovih jedrc in kakavovo maso, da nastane gladka, tekoča zmes. Vmešajte polnomastno mleko v prahu in sladilo, da se popolnoma razpršita, nato vmešajte še sojin crisp, če še ni bil dodan v nadev. Preliv mora biti tekoč, svilnato gladek in brez vidnih suhih delcev.
