  • Postopek



  • 1. V srednje velikem loncu zavrite vodo do enakomernega vrenja. Dodajte steklene rezance in jih kuhajte 3 do 4 minute, le toliko, da postanejo prožni in prosojni. Takoj jih odcedite, na kratko sperite pod hladno vodo in znova temeljito odcedite. Rezanci morajo biti mehki, a še vedno čvrsti, brez škrobnatih ostankov.


  • 2. Lonec vrnite na ogenj in v njem zavrite svežo vodo do rahlega vretja. Dodajte kozice in lignje, ločeno ali skupaj, ter kuhajte 1 do 2 minuti, le toliko, da kozice postanejo neprosojne, lignji pa komaj čvrsti. Takoj odcedite in hitro ohladite. Morski sadeži morajo ostati sočni in čistega okusa, nikoli gumijasti.


  • 3. V majhni skledi zmešajte ribjo omako, limetin sok, čili, česen in sladkor. Mešajte, dokler se sladkor ne raztopi in preliv ne dobi izrazito uravnoteženega okusa, v katerem so slanost, kislina, pikantnost in zadržana sladkost v ravnovesju.


  • 4. V skledi za solato zmešajte steklene rezance, kozice, lignje, zeleno solato, paradižnik, korenje in rdečo čebulo. Dodajte toliko preliva, da sestavine rahlo prekrije, nato pa s kuhinjskimi kleščami premešajte, da so rezanci enakomerno začinjeni, zelenjava pa ostane hrustljava.


  • 5. Solato prenesite na servirni krožnik ali v plitvo skledo. Po vrhu v urejeni liniji ali majhnem kupčku razporedite lososove ikre, nato zaključite z zdrobljenimi arašidi. Površina mora delovati urejeno, ikre morajo ostati cele, arašidi pa dodati končno suho hrustljavost.


  • Serviranje in postrežba



    Solato oblikujte v kompakten kupček, tako da so morski sadeži vidni na površini. Lososove ikre naj bodo zadnji poudarek, da njihova slanasta bogatost ostane razločna ob živahnem prelivu in hladni zelenjavi. Postrezite takoj, ko so rezanci še prožni in zelena solata še hrustljava.
