    Svinjina in marinada



  • 1000 g svinjine

  • 25 g česna, drobno naribanega

  • 45 g sojine omake

  • 30 g rjavega sladkorja

  • 35 g čilijeve paste

  • 20 g rastlinskega olja

  • 3 g črnega popra

  • 4 g paprike v prahu


  • Postopek



  • 1. V mešalni skledi zmešajte česen, sojino omako, rjavi sladkor, čilijevo pasto, rastlinsko olje, črni poper in papriko v prahu. Mešajte, dokler se sladkor ne raztopi in zmes ne postane gladka ter enotna.


  • 2. Dodajte svinjino in jo temeljito obrnite v marinadi, pri tem pa zmes vtisnite v površino. Pokrijte in marinirajte 30 minut pri sobni temperaturi, na polovici časa jo enkrat obrnite. Svinjina mora biti enakomerno prekrita in vidno obarvana z začimbami.


  • 3. Pečico segrejte na 190°C. Svinjino položite na rešetko nad pekačem, da odvečna marinada odteka spodaj. Morebitno preostalo marinado v skledi prihranite.


  • 4. Pecite 55 do 65 minut, v prvi polovici peke enkrat ali dvakrat premažite s prihranjeno marinado. Zunanjost mora potemneti v globoko mahagonijevo barvo, hkrati pa ostati sijoča.


  • 5. Središče preverite s kuhinjskim termometrom s takojšnjim odčitavanjem. Svinjino vzemite iz pečice, ko notranja temperatura doseže 68°C. Pustite počivati 15 minut; temperatura se bo še nekoliko dvignila, meso pa se bo sprostilo.


  • 6. Narežite prečno na vlakna na enakomerne rezine. Meso mora biti sočno, rahlo čvrsto in enakomerno začinjeno po zunanjih plasteh, s čisto aromo česna in čilija.


  • Serviranje in postrežba



    Narezano svinjino razporedite v urejenem prekrivanju na ogrete krožnike. Po mesu rahlo prelijte morebitne sokove iz pekača in ohranite predstavitev čisto, tako da lakirana površina ostane vidna. Postrezite tako, da je glazura skoncentrirana na svinjini, ne nabrana pod njo.
