  • Postupak


  • 1. Po potrebi obložite kalup papirom za pečenje i stavite ga nadohvat ruke. Radna površina treba da bude hladna i suva; pločica mora biti oblikovana pre nego što masti počnu da se stežu.

  • 2. U maloj posudi otpornoj na toplotu pomešajte mlečni protein, hidrolizat kolagena, polidekstozu, zaslađivač, punomasno mleko u prahu, kakao prah, so, aromu i emulgator. Temeljno izmešajte kako bi praškasti sastojci bili ujednačeni i da ne ostanu svetle pruge.

  • 3. Otopite kakao puter za proteinsku bazu na 45°C do 50°C, pa ga prelijte preko suve mešavine. Mešajte odlučno 1 do 2 minuta, dok se ne formira gusta, glatka pasta. Masa treba da se drži zajedno bez mrvljenja i da deluje podatno, a ne masno.

  • 4. Umešajte sojin crisp samo onoliko koliko je potrebno da se ravnomerno rasporedi. Hrskavi komadi moraju ostati jasno odvojeni i ne smeju biti zdrobljeni.

  • 5. Utisnite smesu u kalup u jednom ravnomernom sloju, sabijajući je špatulom tako da nema praznina. Poravnajte površinu uredno. Ohladite 10 minuta, dok ne postane dovoljno čvrsta da se izvadi iz kalupa bez deformacije.

  • 6. Za preliv, zajedno otopite kakao puter i ulje palminog jezgra na 45°C do 50°C. Umutite kakao prah, zaslađivač, emulgator i so dok preliv ne postane gladak, sjajan i potpuno ujednačen.

  • 7. Izvadite pločicu iz kalupa i stavite je na papir za pečenje. Ravnomerno je obložite prelivom, ostavljajući da višak otekne. Omotač treba da bude tanak, neprekinut i da se stegne sa čistim sjajem.

  • 8. Ostavite pločicu da stoji na hladnoj sobnoj temperaturi 10 do 15 minuta, dok preliv ne očvrsne, a unutrašnjost ne popušta uz blago žvakanje umesto otpora nalik pasti.


  • Serviranje i posluživanje


    Poslužite pločicu celu na uskom tanjiru ili je čisto isecite dijagonalno za doteraniju prezentaciju. Preliv treba da ostane netaknut, a hrskava sredina da bude vidljiva samo na presečenoj ivici. Poslužite rashlađeno, ali ne hladno, kako bi tekstura jasno došla do izražaja.
