  • Postupak


  • 1. Po potrebi obložite kalup papirom za pečenje i stavite ga na ravnu tacnu. Precizno izmerite sve sastojke pre početka; ova pločica zavisi od tačnog balansa.

  • 2. Napravite čokoladni preliv: stavite kakao puter, kakao masu, punomasno mleko u prahu, polidekstozu, izomalto-oligosaharid, zaslađivač, so i emulgator u posudu otpornu na toplotu. Stavite je iznad šerpe sa vodom koja jedva vri i lagano otopite, mešajući dok smesa ne postane glatka i potpuno sjedinjena, oko 6 do 8 minuta. Smesa treba da bude tečna, sjajna i bez zrnaste teksture.

  • 3. Sipajte dovoljno otopljene čokoladne smese u kalup da obloži dno i stranice tankim, ravnomernim slojem. Ugaonom špatulom povucite preliv uz zidove kalupa. Ohladite 3 do 4 minuta, samo dok se ne stegne dovoljno da zadrži fil.

  • 4. Napravite fil: u maloj posudi sjedinite mlečni protein, hidrolizat kolagena, polidekstozu, izomalto-oligosaharid, kakao puter, punomasno mleko u prahu, suncokretovo ulje, glicerol, prirodnu aromu, zaslađivač, so i emulgator. Čvrsto mešajte špatulom dok masa ne postane glatka, gusta i kompaktna, oko 2 minuta. Na kraju pažljivo umešajte sojin crisp kako bi ostao jasno izražen i netaknut.

  • 5. Kašikom stavite fil u stegnutu ljusku i ravnomerno ga utisnite, pazeći da ne polomite preliv. Centar treba da bude kompaktan, ravan i popunjen bez šupljina.

  • 6. Prekrijte fil preostalom čokoladnom smesom, potpuno zatvarajući pločicu. Očistite površinu špatulom tako da vrh bude ravan, a ivice uredne.

  • 7. Ohladite kalup 10 do 12 minuta, dok se pločica potpuno ne stegne i lako ne izađe iz kalupa. Gotova pločica treba da bude čvrsta, sa jasnim hrskavim pucanjem preliva i mekim, prozračnim zalogajem iznutra.


  • Serviranje i posluživanje


    Izvadite pločicu iz kalupa i stavite je na sredinu jednostavnog tanjira ili daske obložene papirom za pečenje. Poslužite na hladnoj sobnoj temperaturi kako bi preliv ostao hrskav, a fil se pri zalogaju čisto predao.
