  • Postupak



  • 1. Obložite kalup papirom za pečenje, ostavljajući dovoljno viška da možete lako da izvadite pločicu. Kalup treba da bude spreman pre nego što počnete da pravite bilo koju smešu.


  • 2. U maloj posudi za mešanje sjedinite mlečne proteine, hidrolizovani kolagen, zaslađivač, punomasno mleko u prahu, pšenično brašno, kakao prah sa smanjenim udelom masti i so. Kratko umutite da se suvi sastojci ravnomerno rasporede i da nestanu vidljive pruge.


  • 3. Dodajte emulgator i mešajte špatulom dok smeša ne počne da se skuplja u gustu, savitljivu masu. Ako pruža otpor, snažno je pritiskajte i preklapajte 1 do 2 minuta, dok površina ne postane glatka i kompaktna umesto praškasta.


  • 4. Umešajte sojin crisp samo onoliko koliko je potrebno da se ravnomerno rasporedi. Masa treba da ostane gusta i stabilna, a hrskavi komadići netaknuti.


  • 5. Čvrsto utisnite smešu u pripremljeni kalup u ravnomernom sloju. Sabijte je poleđinom špatule dok površina ne bude ravna i pločica ne zadrži čist pravougaoni oblik. Ohladite 10 minuta da se struktura stegne.


  • 6. U vatrostalnoj posudi postavljenoj iznad jedva ključale vode otopite zajedno kakao puter i kakao masu, mešajući dok ne postanu potpuno tečni i sjajni. Sklonite sa toplote i lagano mešajte dok preliv ne postane gladak i ujednačen.


  • 7. Izvadite pločicu iz kalupa i ravnomerno je premažite čokoladnom smešom, koristeći špatulu da prekrijete površinu tankim, glatkim slojem. Vratite pločicu u kalup ili na obložen pleh i hladite 5 do 8 minuta, samo dok se preliv ne stegne i ne postane blago čvrst na dodir.
