  • Postupak


  • 1. Osušite pileća prsa tapkanjem i ravnomerno ih začinite sa 2 g soli i 1 g crnog bibera. Ostavite da stoje 5 minuta kako bi začini počeli da prodiru u površinu.

  • 2. Stavite tiganj za sotiranje na srednje jaku vatru. Dodajte maslinovo ulje i 6 g putera. Kada se puter zapeni pa se pena povuče, položite pileća prsa u tiganj. Pecite 3 minuta sa prve strane, zatim 2 do 3 minuta sa druge, dok blago ne porumene i meso na dodir ne bude elastično, ali i dalje čvrsto. Prebacite na tanjir i držite na toplom.

  • 3. Smanjite vatru na srednju. Dodajte preostalih 6 g putera, pa crni luk. Kuvajte 2 minuta, uz stalno mešanje, dok ne postane staklast i mirisan, ali bez boje.

  • 4. Dodajte beli luk i kuvajte 20 sekundi, samo dok ne zamiriše. Dodajte pečurke i prstohvat preostale soli. Kuvajte 4 do 5 minuta, povremeno mešajući, dok pečurke ne otpuste svoju vlagu i ne počnu da dobijaju zlatastu ivicu.

  • 5. Sipajte pavlaku za kuvanje i dovedite do blagog krčkanja. Kuvajte 2 do 3 minuta, uz mešanje, dok sos blago ne obloži poleđinu kašike i ne dobije podatnu, sjajnu teksturu. Začinite preostalom soli i crnim biberom.

  • 6. Vratite piletinu i sav sok koji je pustila nazad u tiganj. Kašikom prelijte sos preko piletine i lagano krčkajte 1 minut, samo dok se piletina potpuno ne zagreje i sos ne prione u glatkom sloju. Piletina treba da ostane sočna i potpuno neprozirna u sredini.

    Stavite piletinu blago van centra na zagrejan tanjir i prelijte je krem sosom od pečuraka. Rasporedite pečurke ravnomerno preko i oko prsa tako da sos deluje promišljeno serviran, a ne razliven. Poslužite odmah, dok je sos sjajan, a piletina ostaje mekana.
