  • Postupak



  • 1. Obložite kalup papirom za pečenje kako bi se gotova pločica lako izvadila. Izmerite sve sastojke tačno; ravnoteža zavisi od preciznosti.

  • 2. U maloj posudi pomešajte mlečni protein, hidrolizat kolagena, zaslađivač, punomasno mleko u prahu i so. Temeljno promešajte dok se praškasti sastojci ravnomerno ne rasporede i ne ostanu svetle pruge.

  • 3. Dodajte seckani kikiriki i ponovo promešajte da se ravnomerno rasporedi kroz suvu osnovu.

  • 4. U drugoj maloj posudi sjedinite kakao puter, ulje palminog jezgra, glicerol, sojin lecitin, aromu i kakao masu. Lagano zagrejte samo dok smesa ne postane tečna i homogena, oko 1 minut na vrlo tihoj vatri ili u kratkim intervalima, mešajući dok ne postane sjajna i potpuno ujednačena.

  • 5. Prelijte toplu tečnu smesu preko suvih sastojaka. Radite brzo špatulom dok masa ne postane ravnomerno navlažena i ne počne da se zgrudvava. Treba da deluje gusto, savitljivo i blago lepljivo, ne mokro.

  • 6. Čvrsto utisnite smesu u pripremljen kalup u jednom sloju. Sabijte je ravnomernim pritiskom tako da površina postane ravna i kompaktna, bez vazdušnih džepova u uglovima.

  • 7. Hladite 60 minuta, ili dok pločica ne bude dovoljno čvrsta da se uredno izvadi iz kalupa i zadrži oštru ivicu pri sečenju ili zagrizu.

    Izvadite pločicu iz kalupa i poslužite je celu, ili je uredno isecite dijagonalno za prefinjeniju prezentaciju. Površina treba da ostane glatka i kompaktna, sa vidljivim kikirikijem kroz masu i završnicom koja je mat, a ne masna.
